VINEYARD: Tibooburra, Yellingbo (Upper Yarra Valley) Victoria
WINEMAKING: 100% Sauvignon Blanc sourced from the incredible Tibooburra vineyard in Yellingbo, the handpicked fruit was delicately pressed and fermented in neutral French puncheons, with secondary fermentation occurring in bottle (méthode traditionnelle). It’s undisgorged (on lees), meaning it’s a little cloudy and has wonderful texture. Dangerously drinkable.
