Fetherston’s first sparkling wine, made to celebrate the birth of our little girl Lily Ida Lawrence. Bottled in an extremely limited number of magnums to ensure this wine will stand the test of time. Each bottle is hand labelled and numbered.
VINEYARD: Tibooburra, Yellingbo (Upper Yarra Valley) Victoria
WINEMAKING: Early-picked Sauvignon Blanc from a single block of 25-year-old vines. The hand-picked fruit was whole-bunch pressed with only the premium free run juice (500l/tonne) being utilised. Fermented and matured for three additional months in neutral French oak puncheons, before being sent to bottle for secondary fermentation (méthode traditionnelle). This wine is undisgorged, requiring gentle mixing prior to opening.
TASTING NOTES: Hazy green gold in colour, this wine delivers aromas of white peach, brioche, cashew and cut straw. The palate is bright, fresh and youthful with scintillating acidity. It displays a delicate fine bead with gorgeous lemon sorbet flavours. Dangerously drinkable.

'A fresh, youthful fizz, all stone fruits, green apple and faint bread dough yeasty character. Vibrant bubbles, crisp acidity, a good deal of refreshment factor and high drinkability. A very charming, fine feeling sparkling with broad appeal.'
