Fetherston’s first sparkling wine, made to celebrate the birth of our daughter, Lily. Each magnum is hand labelled and numbered, from a total production of 48 bottles.
VINEYARD: Tibooburra, Yellingbo (Upper Yarra Valley) Victoria
WINEMAKING: Early-picked Sauvignon Blanc from a single block of 26-year-old vines. The hand-picked fruit was whole-bunch pressed with only the free run juice (500l/tonne) being utilised. Fermented and matured for three months in neutral French oak puncheons with one third undergoing malolactic fermentation. Transferred to bottle for secondary fermentation (méthode traditionnelle) and extended lees aging. This wine is undisgorged, requiring gentle mixing prior to opening.
TASTING NOTES: Hazy green gold in colour, this wine delivers aromas of nougat, brioche, white blossoms and candied lime. The palate is bright, fresh and youthful with a juicy saline finish. It displays a fine bead with an array of guava, green apple and cashew nut flavours. Dangerously drinkable.

2021 Fetherston 'Lily' Sparkling Magnum
'Early picked Sauvignon Blanc, from the Upper Yarra. Fermented and matured in neutral barriques before undergoing a secondary fermentation in bottle. Not disgorged. A natural, cloudy, yet bright green gold. There are stone fruits, kiwi, a little passionfruit along with some fresh croissant dough. Clean, crisp, dry and flavoursome, this has summer and warm nights written all over it!'
