Fetherston’s first sparkling wine, made to celebrate the birth of our daughter, Lily.
Each magnum is hand labelled and numbered, from a total production of 48 bottles.
VINEYARD: Tibooburra, Yellingbo (Upper Yarra Valley) Victoria
WINEMAKING: Early-picked, single vineyard Sauvignon Blanc from 26-year-old vines. The hand-picked fruit was whole-bunch pressed with only the free run juice (500L/tonne) being utilised. Fermented and matured for three additional months in neutral French oak barriques (27% through malolactic fermentation), before being sent to bottle for secondary fermentation. This wine is undisgorged, requiring low temperatures and gentle handling during the opening process.
TASTING NOTES: Hazy green gold in colour, this wine delivers aromas of white peach, brioche, cashew and cut straw. The palate is bright, fresh and youthful with scintillating acidity. It displays a delicate fine bead with gorgeous lemon sorbet flavours. Dangerously drinkable.

2021 Fetherston 'Lily' Sparkling Magnum
'Early picked Sauvignon Blanc, from the Upper Yarra. Fermented and matured in neautral barriques before undergoing a secondary fermentation in bottle. Not disgorged. A natural, cloudy, yet bright green gold. There are stone fruits, kiwi, a little passionfruit along with some fresh croissant dough. Clean, crisp, dry and flavoursome, this has summer and warm nights written all over it!'
