Fetherston’s first sparkling wine, made to celebrate the birth of our daughter, Lily.

Each magnum is hand labelled and numbered, from a total production of 48 bottles.

VINEYARD:  Tibooburra, Yellingbo (Upper Yarra Valley) Victoria

WINEMAKING:  Early-picked, single vineyard Sauvignon Blanc from 26-year-old vines. The hand-picked fruit was whole-bunch pressed with only the free run juice (500L/tonne) being utilised. Fermented and matured for three additional months in neutral French oak barriques (27% through malolactic fermentation), before being sent to bottle for secondary fermentation. This wine is undisgorged, requiring low temperatures and gentle handling during the opening process.

TASTING NOTES: Hazy green gold in colour, this wine delivers aromas of white peach, brioche, cashew and cut straw. The palate is bright, fresh and youthful with scintillating acidity. It displays a delicate fine bead with gorgeous lemon sorbet flavours. Dangerously drinkable.

  • 'Early picked Sauvignon Blanc, from the Upper Yarra. Fermented and matured in neautral barriques before undergoing a secondary fermentation in bottle. Not disgorged. A natural, cloudy, yet bright green gold. There are stone fruits, kiwi, a little passionfruit along with some fresh croissant dough. Clean, crisp, dry and flavoursome, this has summer and warm nights written all over it!'
